Originally a variation of Kurume ramen noodles, Kumamoto ramen developed over the years into the present unique style so popular with local residents.
Distinguished by its rich pork-bone based soup, thick, firm noodles, and seasonings such as garlic chips and browned garlic oil, Kumamoto’s ramen has gained the area recognition as a “ramen district,” joining the ranks of Sapporo and Hakata.
There are many Kumamoto-style ramen shops throughout Japan, but for authentic Kumamoto ramen, you should come to Kumamoto.
